Kumquat Salad with Citrus Dressing

Serves: 4-6
Vegetarian!

Ingredients
4 cups Salad greens of your choice
10 Kumquats (sliced and seeds removed)
1/2 cup Roasted or candied pecans (chopped)
1/4 cup Feta cheese (crumbled)
FOR THE DRESSING:
Juice from 1 lemon
Juice from 1 lime
2 tablespoons Orange juice
1 tablespoon Honey
1/4 cup Olive oil
Salt & pepper to taste

Step by Step Instructions
  1. Put the salad greens, sliced kumquats, and chopped pecans into a bowl.
  2. Whisk the 3 juices and the honey together in a small bowl, then whisk the olive oil in while steadily pouring it. Season with salt & pepper if desired and mix again.
  3. Pour the dressing over the salad and toss to combine. Crumble feta over the salad if desired.
